Right now the only ones that come to mind are Canon Ball Run, Six Pack, Cars, and Talladega Nights. I guess the Fast and Furious movies would also qualify. I loved Cars and right now it's the only car racing movie I can think of that I actually liked.

Its not necessarily about car racing, but my favorite is "Speed" with Keanu Reeves and Sandra Bullock. It keeps you on the edge of your seat wondering what will happen next.
