I don't think it was the book called The Boy Knight: A Tale of Crusades. I remember there were three kids (two boys and a girl) who play together at the beginning of the book. Then the boy goes into knight training and goes to the Middle East to fight the armies of Saladin. At the end, he returns to England, marries the girl, and they sit around and talk about the past.

It is a stretch, but is this Black Horses for the King by Anne McCaffrey? That is about a boy who goes to Arabia to bring back the Arabian horses. The smaller ponies they rode in Britain would not carry a knight wearing full armor into battle. The Arabian horses were not used to the dampness in Britain, and their hooves rotted. The boy was an apprentice blacksmith, and he and his master invented iron horseshoes so they could still use the larger horses. Very interesting read.
