Umm.. Try Gintama
The closest thing I can find to Gintama in your list is.... One Piece.
Although it's really not like One Piece.
If you want something that's really like One Piece, look up Law of Ueki.

Somehow similar...Hmm...I think I can give you five.
Blood+ - it's about a girl, Otonashi Saya, who finds out that she must become a Chiropteran slayer. A Chiropteran is a large creature (you'd see it in the series) that lusts for blood. Haji, is her cello-playing guardian, who, in some point, must always keep Saya alive and safe. It's pretty bloody too. I haven't finished the series yet, so just watch it if you want to.
Shakugan no Shana - a story about Yuji Sakai, who was suddenly attacked by a monster that looked like a doll, then was saved by red-haired Shana, who tells him that he is a "Torch", a sort of replacement body when a human nearly falls into death.
Tokko - Shindou Ranmaru is a survivor of the Box of Dirge, who is assigned to investigate it. He then meets Rokujo Sakura, who appears in his dreams, and she somehow holds the key to finding out why Ranmaru's parents died. It's quite full of bloody catastrophe. ;)
Peacemaker Kurogane - a bloody anime (again), where Ichimura Tetsunoke, a short guy who dreams of being a samurai, who then joins the Shinsengumi, so that he can take revenge for those who killed his parents.
Black Cat - Train Heartnet is a member of Chronos, a society of assasins. He is a cold blooded killer at heart, until he meets Saya Minatsuki, who teaches him the value of life. Through his adventures, he travels with her, Sven Volfied, and Eve.
That's too much for me now. (yawn.)
And if you want, also try Trinity Blood, Fate/Stay Night, and Samurai Deeper Kyo.
