thermostat doesn't max out but goes over 1/2 way up for a few seconds(high then I've ever seen it) then comes back down to a normal level.
A) Any guess what could be wrong
B) Am I risking engine damage if I drive it (even if only driving to repair shop)

I'd say your thermostat is stuck open not allowing the engine to sufficiently heat the water. The water from the engine is used to provide the heat for the heater.
You aren't really risking long term damage if this is the case but you aren't allowing the engine to warm up enough to function at its best.

Check the radiator fluid...............the thermostat only reads the temperature of the fluid, and if the coolant is low it might not be telling you it's overheating. Also, if you have no heated coolant,(because its low), you have no heater. If this isn't the problem you probably have a defective thermostat.

It sounds like you're just low on coolant. No heat and erratic gauge are the two main signs.
