I know that in traditional Jewish weddings, they don't, but nowadays, do they all tend to wear them? (Well, except for Orthodox, I suppose.)

The differences are just what you suspected them to be. Most Jewish men who do not practice Judaism do wear wedding rings, while the Orthodox men do not. Some people who call themselves "Modern Orthodox" do wear them as well.
