iam thinking of majoring in it and minoring in econ
is this pretty much a waste of time/money

It's not useless, but the number of students in this subject exceeds the number of jobs out there in the field. You had better be at the top of the class, or prepare yourself for a minor that gets you a job.

Towards the bottom, it lists careers.
Seems like there is a pretty good chance you wont end up with something directly related to sociology.
You might also need to go on for a masters for it to be useful.
Perhaps consider majoring econ and minoring sociology.

Not if those subjects interest you. But I wouldn't expect them to lead directly to a relevant career.

Not at all. It can be used well by itself, or be a sound stepping stone to higher degrees.
