Most by memory and voice, and then eventually written down. I'm sure plently of details that we would have liked to have known and things that can't be found out through archeology were lost.

They were sang as songs. The story of the Trojan war was passed down for 500 years before the Greeks had a written language by songs. Some say that Homer (a poet and singer) inspired the development of the Greek written language. He didn't actually write story of the Trojan war it but sang it.
