Ask her to please do her praying silently. God will hear her just as well as if she is talking out loud. If she won't quiet down, ask to be re-assigned to another room and explain why. This could affect your grades, after all,

I would say that you should just tell them that you are interested to hear more about the Catholic religion since you grew up in a different setting:) I'm sure they would love to talk about it. Don't be shy! And as far as the mass thing goes, don't worry about it. Just follow what everyone else is doing. You really don't have to do any of it. They are understanding usually, and are just happy to see you there. Only thing you should know is not to take communion. Unlike the Baptist section of Christianity, they believe that because the bread and wine are blessed, they actually literally turn into Christ's body and blood in your body, and that it is wrong for anyone not Catholic to partake of it.

Just explain to her in a nice way how and when you find her prayers intrusive. There are several compromises, including her praying silently (God hears even the silent prayers), and maybe arranging for her to have some time on her own in your room for her to pray.

Your roommate has the right to pray. There is nothing inherently intrusive about one praying.
Based on what you've said - that your roommate simply prays to God - there is nothing about simple prayer that can be considered "intrusive". If your roommate was actively trying to evangelize you, after having told her you weren't interested, that's intrusive. Simply praying is not an intrusive act.

You have the right to make arrangements to move in with a new roommate.
