It would probably help not to think in terms of hearts. They're just big muscly pumps. The actual organs involved in love, apart from the obvious ones, are things like the brain. Getting brains to behave sensibly - or worse, behave as you want them to - is like herding cats.
And even if your offer is appealing to the brain in question, there are even more subtle and intractable physiology to get around - like the major histocompatibility complex. Tests have shown that women are able to detect differences between their own immune systems and those of a guy who's wooing them. You may be the most attractive and eligible guy for miles, but if your genes won't give her babies better disease resistance, all is lost.
(Not that this is done consciously, you understand, any more than people fancy Pam Anderson because she looks like she could really feed babies well.)
Sadly, there are some partners you're never going to get, no matter how right it seems. All there is to say is that this, too, shall pass.
