How often and how much should I feed my Jackson Chameleon? Right now I am feeding it about 2 crickets a day?

You're underfeeding him/her right now. Depending on the size of your chameleon, you should be giving it 5-6 (or more) a day, twice a day if it's a baby.

If it seems ok then that is good.
But i must say i wish my Beardie eats a little like that lol

They should eat everyday as much as they will eat.
