Neil Gaiman: Gaiman tends to write darker modern fantasies. Neverwhere is one of his better books, about a secret world in the London Underground. Another good one to check out is Good Omens, a collaboration with Terry Pratchett that spoofs the Apocalypse. Very entertaining, very funny.
George R.R. Martin: Martin is an absolute staple in the genre. His series, A Song for Ice and Fire, is a new classic in epic fantasy. Each chapter is told in third person from the perspective of a different character. It's a gritty, realistic fantasy series and I highly recommend it.
Terry Goodkind: Goodkind's most famous for his Sword of Truth series. It's another epic fantasy, and while it falls into a few cliches and stereotypes that plague the genre, the characters are developed enough to make it interesting. Good solid series.
Robert Jordan: Jordan's series is The Wheel of Time. It plays on some Arthurian legends and there are many parallels you can draw with today's political situation. It's another major epic in the genre.
Michael A. Stackpole: Stackpole has written a great epic fantasy series beginning with A Dark Glory War. He writes compelling characters, interesting stories, and he doesn't find it necessary to end things on a happy note.
Sergei Lukyanenko: He's a Russian author recently translated into English. His first novel, Nightwatch, made its American debut last year. It's an amazing modern fantasy set in present-day Moscow about the Others: magicians, shapeshifters, vampires and more, all living alongside humanity without interfering. It's a great exploration of good and evil. The sequel, Daywatch, is due out this month, I believe.
Chris A Jackson: He's an independent writer, so you can find his books at http:///www.jaxbooks.com. He's won several awards for one of his more recent books, Weapon of Flesh. I really believe this author has the potential to break out. His books are intriguing and his ideas are original. If you read some of his older work, like Death Mask, and then check out Weapon of Flesh, you'll really see how much he's grown as an author. Definitely worth the read.
Elizabeth A. Lynn: Lynn writes very lyrical, poetic fantasy. Arguably her best book is Dragon's Winter, an epic fantasy about shapeshifters and humans living alongside each other. It weaves two storylines together very effectively. Beautifully written.

I'm a big big fan of the Sword of Truth series by Terry Goodkind. He's about to finish the series with his 11th book sometime this year. But if you're looking for something that is a fast read and usually has a good plot check out the first book : _-Wizard's First Rule_
Someone else mentioned Mercedes Lackey. I've also been reading her for years. Her Valdemar stories are great reads. If you choose her you may want to star with either _The Last Herald Mage_ trilogy or the _Herald's of Valdemar_ trilogy.
Best of luck, good reading!

I've been reading fantasy since I was in my teens, and the following authors are quite good and they appeal to a large audience, regardless of age:
Mercedes Lackey
David Eddings
Jennifer Fallon
Garth Nix
Terry Pratchett
Tamora Pierce
Katherine Kurtz
CS Lewis
Lewis, Pierce and Nix are typically found in the young adult area. Pratchett can be found in young adult, but he's primarily an adult fantasy author. The rest can be found in the adult section. It also wouldn't be a bad idea to just go to your bookstore and look at the books in the fantasy section (and many bookstores break down the YA section by category too). Ultimately, only you'll be able to determine what you really like, but these are a good start.

Anne McCaffrey is an awesome author, best known for the DragonRiders of Pern, but she has written some other series as well that are equally good such as the Acorna series, the Brainship series and also the Tower and Hive series.
I have also recently gotten into Robert Jordan's Wheel of time series, very well written books and it just keeps growing.
I also really like the writing of R.A. Salvatore, very talented author.

This one isn't out yet, but keep a sharp eye out for Cassandra Claire's City of Bones in april. I'm sure it will not disappoint. You can read the first chapter at http://www.cityofbones.com
She wrote Harry Potter fanfiction for like 5 years, three novel length stories freely available on the web. They were called the Draco Trilogy, and were some of the best stories I've ever read. My mother went so far as to blaspheme that she was a better writer even that Rowling herself.
And the with that of rabid fangirlism out of the way...
