what happens when Potassium reacts with Oxygen, Water or Acids?

1.) Potassium oxidizes rapidly in air, giving off heat.
K + O2 -> K2O + K2O2

Note that some of the potassium will form Potassium oxide, and some will form Potassium peroxide. This is similar to how burning a hydrocarbon produces mostly carbon dioxide, but also a little carbon monoxide.

2.) Potassium reacts explosively with water, releasing hydrogen along with enough heat to ignite the hydrogen as it's released:
2K(s) + 2H2O(l) → H2(g) + 2KOH(aq)

3.) Potassium forms bases, so when these alkaline compounds react with bases, they form water and a salt:
KOH + HCl = H2O + KCl
