What can a 19 year old male do in Las Vegas?

Sadly, not a whole lot. Most casinos check ID's and therefore you won't be able to walk around them or go to the clubs. With that being said there are other things to do in the city.
Such as:
The fashion show mall
Hoover Dam
Bellagio Fountains
Nascar Cafe & Rides at the Sahara
Rides and Coney Island at New York, New York
Gameworks
People watch
Adventure Dome
The Bodies Exhibit
Fremont Street

Shows from nudity to weird and mystic such as the Cirque Du Soleils
Free shows... Such as the Mardigrass @ Rio or the one at the Aladdin, Bellagio, etc...
Hoover Dam helicopter trips...
Roller Coasters @ the New York New York and Sahara
Other Rides @ the top of the Stratosphere
Fashion Show Mall
There is a mall inside almost every mayor casino/hotel
Hookers.. LOL...

There's lots to do in Vegas, including seeing shows, riding the Rollercoaster @ New York New York, and of course sightseeing. You never know what to expect in Vegas, and be careful around the casinos because they will kick you out if you are under age. I can say so from previous experience.

Night clubs, all types of shows, guided tours, many different restaurants, and anything you can imagine besides gambling.
