Witches believe that the "energies" of the natural world can be manipulated to bring about positive changes in themselves, their lives, and the world. Spell work is the act of manipulating these energies. Though "witchcraft" has negative connotation, most modern day witches reject the idea of using magic for any purpose that causes harm or seeks to control another person. Witches morality is summed up succinctly with one rule: "do what you will if it harm none." Witches are also against attempting to convert others to Wicca, since they don't hold their belief system to be "the only way," but simply one path that is right for some people, while accepting it might not be right for everyone.
"Wicca, a Guide for the solitary practitioner" by Scott Cunnigham, is a good introductory book, as are other books by the same author. Llewellyn publications has many books available on a wide variety of different types of magic, paganism, and neo-paganism.

I'm sure you could recieve several different variations of those meanings. Here's a simple statement of what I consider to be the meanings (as I am one.)
A witch is a person that uses their personal energy and the natural energies around them to accomplish a certain goal. Witchcraft is just the direction of those energies towards your purpose.
Also, to clarify... Some people believe in 'White' and 'Black' magic. However, I'm not alone in the belief that it is rubbish. To me, it's a natural balance, neither good nor bad. There are good and bad things all around us in nature, but it's always a balance.

A witch was actually a healer...so witchcraft is a form of healing..they would have to be experts on plants and their properties..to use them in their remedies :)
