Maybe you should do something you know a lot about if you want it to be easy. Look at your interests.
If you want a challenge, go for something you don't know much about but you would like to and do some research.
I can't really give you any good ideas because this is you and not me and I know nothing about you.
I will tell you that politic persuasive essays are very easy because they are so many points on each side.
ex: abortion.. gay marriage.. mexican border hoppers.. etc.
