But aren't I a liar because although I am saying the truth (that I am not always lying), I am then lying about lying. Right?

Yes and yes. You stated that everything you say was a lie, but that in itself would be a truth that simply nullifies your statement. However, it's consistent with your behavior and therefore your original classification of being a liar is correct.

You're a liar except your declaration is the truth. So not everything you say is a lie. But you made the choice to say the statement.

Indeed you are. You are certainly lying when you say that 'everything I say is a lie,' as the statement would be self-contradictory if held to be true, and is still a lie when taken as false. Therefore, logic dictates that you are a liar irregardless of your statement.

This is an impossible case.
If everything you say is a lie, then you are lieng now. If you are lying now, then the statement "everything I say is a lie" is false. If that is false then there are times that you do not lie.
Or not everything you say is a lie and then the statement "everything I say is a lie," is false because there are times that you do not lie.

Yes. Even if it's a fib (a small lie) and EVERYTHING you say is a lie/fib, then yes you are a liar
