Tanning is correct. Pickling and curing are parts of the process. Raw hides are cured with drying and salting to keep them from rotting until they can be tanned. Pickling is soaking the hides to make them flexible, remove oils, break down some of the fiber and let then rot just enough that the hair comes off. Tanning is a chemical process that changes the proteins in the hide into something that does not break down easy. It is usually with acids like sulfuric or tannic acid. It can also be by the aldehydes. The final step in tanning usually is breaking which means working the hide and oiling it to make it soft and flexible again.

Rawhide itself is a skin that has been cured by drying but never tanned. Next time you are in a pet store notice the rawhide chew toys for dogs.

Actually, the animal skins are already leather. Curing is the process of sealing, waterproofing, and preserving the skins so they do not rot or deteriorate while you are using them.
