we all know that an adjective is a word that describes a noun or a pro-noun, but in the phrase, "a quite interesting book" what is the word quite representing? interesting is the adjective, and book is the noun.

The term I'm familiar with in addition to being an adverb is an intensifier - expands on the adjective, adverb,... ie. very, quite, even, more.
