It's perfectly fine to leave it plugged in. The only way to extend battery life is to download a program that you can change the settings on your iPod such as extend volume, change fonts, and extend battery life. There are also things to clip on the bottom of the iPod from Apple that give an extra 8-10 hours. Beware that using the hack program voids your warranty.
