I get that it's a Mexican tradition, but how did it start?

Before the pinata, it was the tradition to hoist a fat goat into the air and beat it with sticks. This annoyed the goat greatly and was unsatisfactory, to say the least, to the children participating in the game as what was the point of this? whyfor the beating of the goat?. Iinstead of beating the goat, the children would wander about, bored and tearful, complaining that there was nothing FUN to beat with their sticks.

Other animals were tried - weasals, pigs, chickens, etc. For a short while, it was popular to string up a drunken uncle just to hear the wide variety of noises he'd make while being beaten by the so-happy children, but - all good things come to an end, and the pinata was born.

Cheap candy and violence.

Always a party favorite.
