there r many sounds in nature but y did they take only sa, re,ga,ma,pa,da,ni,sa as thier basic swaras for carnatic music

Hi Jess, very good question ...Infact have you ever wondered there are so many colours but all are formed from three basic colours -- Red Yellow Green.
Even the most complex compound is formed by the most simple element. The same goes for Music.
The seven Swaras (Sa Re Ga/Do Re Mi) can be used to provide the most complex music.

Yes, there are many sounds used in the music as well, and there can be many translations of the such.
