I would teach Financial Principles. I think that so many students graduate not knowing how to responsibly handle money that this would be the greatest service I could do to the next generation. We have been brought up in such a culture of instant gratification that we're willing to sacrifice our futures so that we can have things now. I think the real cost of debt, credit cards, car loans, and what not needs to be communicated effectively to students, so they can see just how far in the hole they're going to get if all they do is make minimum payments all their lives. And I'd teach about insurance...why you need it, what it's for, etc...

I don't know what they call it these days. Used to be called Home Economics.

Combination of cooking, sewing, learning things like how to buy groceries and furniture, and how to budget. In short, how to get along in life. Practical things that everyone needs to know.
