Why do those survivors who hold up in bunkers full of food always try and think of a way of reversing or curing the zombie plague? surely the zombies are dead and if the people simply wait for a good hot summer to pass by, the zombies will have just decomposed to goo? problem over!! (apart from the smell)

Because it's Hollywood. It's the same reason the girl home alone suddenly decides that she needs to retrieve some item from the basement. So she then proceeds downstairs (forgetting to turn on the lights, of course), when suddenly she hears the sound of a chainsaw start. Does she run? No, she says something stupid like, "Dad, is that you? This isn't funny you know!" Then when the killer reveals himself, what does she do? She screams. That's it. Just screams. She doesn't run. She doesn't fight. She just screams and stands there until he kills her. Some of the smarter ones may run. Do they run to the kitchen and grab a rolling pin, a steel frying pan, or a butcher knife? Of course not! She runs upstairs (tripping at least twice, so the monster can catch up) and then when she's out on the balcony, with nowhere to run, she resorts to the "standing still and screaming" until she's killed!
So, zombie movies are the same way. If the characters acted logically and intelligently, then nobody would die. And the movie would bomb. And the studio would go bankrupt. So...they make the characters dumb, so that the viewers can be entertained! (Hey, you asked!)

Well they might want to try to find a cure in case it happens again.
Aside from that- if the zombies turn into goo.. the goo would still be undead goo. Technically you would have a zombie "The Blob" seeping into the cracks and crevasses in order to get to the people left.

Read the "Zombie Survival Guide, some thing in the virus slows the decomposition, if not stops it all together, sooner or later your food will run out and I'll be waiting with all the guns and ammo

Well that's simple,
ITS A MOVIE
People like to watch how other people suffer in movies like this. The only thing is that if this were to happen in real life we would be forced to do the some, as we have watched so many of these movies.
The question is, would you wait, or try and kill the Zombies?
