Victoria was the last of the Hanoverians. She married Albert of Saxe Coburg Gotha.Their son, Edward VII was a Saxe Coburg Gotha as was his son, George V.

George V changed the family name to Windsor during WWI at the request of the government. At the same time the Battenbergs changed their name to Mountbatten.

The current Queen is the last of the House of Windsor. Prince Charles is Mountbatten-Windsor as are William and Harry. Harry's title is Prince Harry of Wales as he is the son of the Prince of Wales so, along with many of the nobility in the armed forces, he uses his title as his surname.

The original name was Saxe-Coburg-Gothe. This was queen Victoria's husband's name. The second generation after her changed the name to Windsor, as they thought the original name was "too" German.

Well they call themselves Windsor because it doesn't have that nasty Germanic Warrior sound of Saxe-Coburg-Gotha (can you imagine?) that the subjects so find distasteful. Its so hard to rouse the rabble when slogging around such a teutonic banner.
