I was told that disconnecting anything from your USB port without unmounting it or shutting down your computer first, would damage the computer.

It's always good to unmount it first but most likely nothing wrong will happen if you don't. You also do not need to shut down your computer.

no you can disconnect your flash stick anytime you want without causing any damage i do it all the time

nope, if it were a flash drive in the middle of saving something though, it would damage that data
