The Capulet's would not have a coat of arms since they are not nobility. That is exactly why Capulet is trying to marry his daughter into the nobility by arranging her wedding with Count Paris. The Capulets are rich merchant class on the hunt to rise socially, and the only way at the time was marriage. Later it would be possible to buy your way to a coat of arms (as did Shakespeare himself, reportedly).
