You go to your itunes, plug the ipod into it, click on your ipod music, highlight the songs and you can delete them that way. Once you delete songs from your ipod and they are not saved onto your itunes library they'll be gone forever. If you want to delete whole albums click on browse (the little eye looking thing on the bottom right).

You can delete the music off iTunes and then sync your iPod or when you sync it all you do is click the box that says sync mannaly, then choose the songs. You might want to choose the second choice if you want to keep the songs in your iTunes libary but not you iPod.

You delete the song from iTunes. Your iPod will upload whatever's in the Music Library unless you set different settings. So, just delete the song from the Music Library. If you delete a song from iTunes, however, you will have to rebuy it if you ever want it back.

If you want to keep the music on iTunes but not on your iPod, open iTunes, then deselect the songs that you don't want. Next, sync your iPod to iTunes (usually you just right click on your iPod and select sync) and when it updates, the songs will be off your iPod.
