how can you demonstrate a project on the question... Why do unanimated optical illusions appear to move?

This actually depends on the nature of the illusion, as different illusions have different reasons for their apparent movement (or other characteristics).

A good place to start is the Wikipeida article linked below. While I don't support citing Wikipedia in any sort of academic work, it's a good place to begin looking into the various studies that have been done on this issue. As a side note, while this relates to optics in physics, it's probably more directly related to physiology.
