I am a plumber.
There is no better advice I can give you than to use a plumber.
Preferably a corgi plumber or a Registered Plumber, as there are a lot of suspect plumbers out there

As a plumber, I would not recommend this. Your incoming pressure is far greater than the pressure from the fridge, and you will have mains pressure surging up the pipe into your fridge.

Try a saddle valve if you have good water pressure. If water pressure low, simply cut the half inch line in two and compress or sweat a tee with a quarter inch compression fitting for the line to the fridge. Simple.
