Try this quick coffee cake recipe. It's pretty much amazing.
What you need:
1 cup sugar
1 and 3/4 cups white flour
2 teaspoons baking powder
4 tablespoons butter
2 tablespoons applesauce
1/2 cup milk
2 tablespoon sugar mixed w/ 1 tablespoon cinnamon
How it's done:
Preheat your over to 375 degrees F. Butter an 8-inch square cake pan. Mix the first three ingredients in a large bowl. Work in the butter with your fingers or a pastry blender until the mixture feels sort of like sand. Blend in the applesauce and the milk. Spoon into the pan. Sprinkle the sugar-cinnamon mixture evenly over the top. Bake for 10-20 mins. (it's about 14 minutes for my, but the time may differ with your oven) depending on your oven and how soon the tasty goodness begins calling your name.
