write about your family.
If you are not fluent in Spanish try to use an easy vocabulary. By writing about your family you can describe their age, personality, appearance, etc. As a second language I know how difficult it is to write a paper by using a dictionary, some times the words has another meaning making the entire sentence confuse to the audience.
p.s Do you have a topic?
Good luck

Assuming you're beyond the "I went to the market and bought..." state, why don't you write about the Spanish conquest of Tenochtitlan? You could write it from that Aztec point-of-view. (I know, it's already been done, and there's a book by that name.)
So, why not be one of Santa Anna's men who enters the Alamo after the big battle? You could be the one who discovers Davey Crocket's body.
