2002 Chrysler Town and Country Mini Van with 68,000 miles.
The engine would start to stall and shut down when I put the A/C on. The minute I shut off the A/C everything was ok. There was also a burning smell.

Your A/C compressor is seizing by the sounds of things. When the A/C is turned off, the compressor clutch is disengaged. The burning smell you describe only further reinforces my conclusion. Take it in to get fixed right away before it snaps your drive belt while you are driving, in which case you will lose your power steering, water pump drive, and system voltage charge instantly.

It sounds like your AC clutch or compressor needs replaced. The burning smell would be the belt turning on a clutch or compressor that's siezed, which would also explain why your engine is being drawn down so severly.
