The oldest example of a tandoor was found in the Harappa and Mohenjo Daro settlements of the ancient Indus Valley Civilization. (The ancient city of Harappa existed from about 3300 BCE until 1600 BCE and Mohenjo-daro ( Urdu: موئن جودڑو, Sindhi: موئن جو دڙو, English: Mound of the dead) was a city of the Indus Valley Civilization built around 2600 BC and is located in the Sindh Province of Pakistan.It is used for cooking certain types of Indian and Pakistani food, such as tandoori chicken and bread varieties like tandoori roti and naan. (The word tandoori is the adjective form.) It is also known as a tonir in Armenian which is a widely used method of cooking barbeque and lavash bread.

The tandoor is also known by another name of 'Bhatti' in India. The Bhatti tribe of the Thar Desert of Northwestern India and Eastern Pakistan developed the Bhatti in their desert abode, and thus it gained the name of Bhatti. It is thought to have travelled to Central Asia and the Middle East along with the Gypsies or Roma, who originated amongst the Thar Desert tribes.
The distinct flavours of food cooked in a tandoor is a result from the oils and fats dripping from the marinated meats onto the hot charcoal producing the smoky flavours we all enjoy. As I explained at the beginning that the tandoor is a simple clay oven, this is true but when I began building my own tandoor, obtaining suitable clay was far from simple. The truth is any fire resistant earthenware is quite okay, after numerous failed attempts at obtaining clay I finally used fire cement.

In the tandoor the meat cooks by a combination of convected and radiated heat while the Naan is pressed against the sides of the pot with the use of a small pillow and is cooked by conducted heat. (Incidentally, the familiar tear shape of Naan bread comes from the dough dripping down the sides of the tandoor).
