After installing thousands of sq. ft. of tile, with various adhesion methods, 24 hours is likely a bit longer than one needs, but a prudent amount of time. Even a polyblend thinset will SET in a matter of a couple of hours, but the thought is that total curing is best allowed before walking on, or grouting. One reason is that the installed tiles shouldn't be stepped on or knealt on as that might cause shifting or an uneven effect after an install. Plus the fact that any moisture needs time to dissapate or evaporate from the interior spaces beneath the tiles.
The grout process is similar but immediately after working a smallish area, say 4 x 4, a barely moist, appropriate sponge should be used in the initial swipe/clean up. As the grout drys, which will be fairly quick, a wetter sponge can be used. Grout too should be allowed 24 hours to be safe.

Obviously there are Mastiks like some used for verticle installations that will dry/set/cure faster, but even a decent bathroom wall tile job should be no less than a 2 day process.

Depends on what thinset mortar you used. It should tell you on the bag. Some are quick drying and you can grout within hours. The majority, however, call for 24 hours.
