I think Victoria Rose is absolutely beautiful. I love Caterina but Angela doesn't quite role off the tongue with it. What about Caterina Angelica or Angelina? For the boy, you could make it Antonio instead of Anthony and it would sound more Italian.

What about Caterina Angelica for something more similar to what you like. I also like Victoria Rose or Rosa.
For boy I like Nicholas Anthony but what about something even more Italian like Nico or Nicolo Antonio.
