Does anyone know how to replace the soft plug on my jimmy, Is it simple? Do i need any special tools?

If it just fell out, that is odd. Did it overheat?
You should have lost all coolant quickly.
To put a new one in, make sure the old one is gone and hole is cleaned up, put some silicone around hole. Put the new one in with a socket that fits inside the plug and an extension and hammer.
Some of them are hard to get at and this makes it very tough to do.

You should need nothing more than a pocket size screwdriver to help the plug into the hole. Put one side of the plug down into the hole and use the screwdriver to force the rest of the plug in.

That would depend on what the heck a soft plug is.
