In Safari > Preferences > Security > Show Cookies will list which sites have been visited. If you have OmniOutliner.app, open Finder > Home > Library > Safari > History.plist (open this file with OmniOutliner)
It would be pretty hard and expensive to extract deleted files from the hard drive after they have been deleted, especially if he used the Secure Empty Trash option.
The others are right, it would be better to ask than to spy, especially if it concerns a relationship.

You can get cheaper spyware programs to monitor history but they are uneffective so you can instead by special monitoring software for a one off price to monitor everything he does on the computer.

Probably the easieast way through this is not to find out.
If he finds out you've been snooping through his stuff there's going to be an arguement and I'm pretty sure you don't want that.
Either way there are trust issues here.

who is less trustworty at this point, the one covering up what they were doing, or the one interested in knowing what their significant other does while they are not around?

You most likely can't. He's probably just looking at porn and there's nothing wrong with that, it's just something some poeple do. You should let him have his privacy, if he didn't want to be with you, he wouldn't be.
