I like:
"Zen And the Art of Happiness"
by Chris Prentiss
I like this book because it is simple and straight to the point.
It is something you can read and reread over and over again and each time you get more from it.

Something by DT Suzuki? I think he is regarded as the best at explaining Buddhism to the western world. Very readable.

The best books, in my opinion, are those by D. T. Suzuki, Alan Watts, and Thich Nhat Han.

Get a simple book on how to do zazen (sitting practice). Zazen is zen.
Zen is about how you are, not what you know. Practice zazen.
