In Florida, where I serve papers, if this situation occured exactly as you described, I would walk to the point where you started running from me, drop the papers on the ground where you were standing, and (as a COURTESY, not a LEGAL REQUIREMENT,) announce that you were served.
The law is structured so that:
a) as long as you know what I am,
b) I know who you are,
c) we actually SEE each other, and
d) I leave the papers there,
...at that point, the serve is effected. It's rare that people avoid me the way that you describe; they'd rather just stand there and lie to me.
I'm interested in hearing about other state's laws regarding the minimum requirements to effect service.

Why? Will running make the problem go away? Will they stop looking for you? Too many 3 Stooges cartoons?
Own up and just accept it. It'll be lower stress in the long run and the end result will be the same

If you want to make a game out of it, then by all means take off running. By law they have to physically get the papers in your hands, either via handoff, or throwing at you and you catching them, etc. They can also hand the papers to someone who resides at your house (husband, wife, child, bf, gf etc). So I say if you can avoid forever acknowledging your identity to strangers or answering the door to strangers, good for you.

In most states, you would not have a duty to simply stand there and be served unless it was a law enforcement officer. But in reality, running won't accomplish must. Most registered process servers are trained professionals and they will eventually find you to serve you.
