Fullmetal Alchemist is an excellent choice. The animation, storyline, and music are wonderful. I also recommend anything from Miyazaki and Studio Ghibli, Princess Mononoke, Spirited Away, Howl's Moving Castle, The Cat Returns, etc. Others I think you would like Wolf's Rain and Rurouni Kenshin.

Those anime are great, but I'm a bit surprised that you haven't looked into Trigun or Cowboy Bebop if you enjoyed Samurai Champloo. It's a necessity if you liked Samurai Champloo.
