Information privacy in the workplace basically refers to making sure that the confidential data that you're handling, doesn't get outside of the company and into the wrong hands.

For example, if you're a consultant, and you work on a client site, handling their sensitive information (how much they make as a profit on something, how they ship something, how they do anything in their business), information privacy refers to the fact that you can't go around casually mentioning how much profit is made on a t-shirt because you are privy to privileged information.

It can also refer to security issues - information privacy, can be the whole idea of having to shut down your computer after you're done at work so no one can log on and view private info, changing your passwords every 4-6 months, or making sure that you shred pieces of data that the company doesn't want getting out to their competitors, or that anyone outside of the company can wander by and take for their own use.
