Less surface area to interact with air. Fumes from the glue prevents buildup in the bottle, when closed. Leave the cap off the bottle and you'd be singing a different tune, though. It would take some time, but would start with a "skin" on the surface of the glue, then depending how porous the skin was, eventually get deeper into the glue.

Most glue needs air to cure. Glues like Gorilla glue or any polyurathane glue need moisture to cure. So a sealed bottle won't let these things in.

because it's got a cap on and won't dry out with the cap on. leave the cap off and it will start to harden inside. Will take longer for fuller bottles because there is more moisture that needs to evaporate and dry out.
