I'm interested in studying commerce next year in Australia. I'm currently a French high school student. I'm interested in applying to the University of Melbourne. But I'd like to know what recruiters would think about such a degree in Europe and in the US?

The University of Melbourne, in fact all 39 universities in Australia (yes there are only 39 of them) are internationally recognised everywhere. Uni of Melbourne are a member of "Group of 8" consortium, marking it as part of the largest universities in Australia.
I am listing the weblink for your reference. You may also want to check Monash University website, as some people would prefer the business courses offered by Monash.

What do you advise 'valid'? in case you have a level from a recognized college in Australia, there is not any reason it would not be totally universal as equivalent to any degree from Europe.

UM is internationally recognized. That's all that matters.
