Did the characters ever get off the island in the last episode or anything? I remember seeing the show as a kid, but I never found out how things ended up and it just occured to me, several years later for some reason. So did they end up dying horrible deaths to cannibals, get off the island or just decide to live there and build strip-malls or what?

The last episode of Gilligan's Island aired 17 April 1967. There were three movie sequels: Rescue From Gilligan's Island (1978), The Castaways On Gilligan's Island (1979) and The Harlem Globetrotters (search me-it must have seemed like a good idea at the time) On Gilligan's Island (1981).
They were rescued in the first movie sequel and it turned out to be a ratings winner so another two were made.
In Rescue, they all meet one year after they are rescued and decide to go on a short cruise.....oh dear.
In The Castaways they were all rescued again and returned to the island voluntarily to set up a resort.
In The Harlem Globetrotters well, The Harlem Globetrotters crash land on the island....

They did finally get rescued, but then there was a spin-off where some of the characters stayed and turned the island into a resort location. It was pretty silly.

I think the plane crashed after they got rescued and they never made it back alive. Alternate ending: They were resceued and lived happily ever after in Hawaii.

I'm not sure but, when the show ended the actors got screwed. No one had negotiated in rights for the reruns or syndications.
