I'm not sure where you're flying from or when, but the two big components are flights and accommodation.
For the accommodation part in Seville try this website where you can sort offers by location, price, stars and dig deep to see what the various offers include in terms of meals ( if any ) and amenities.

You can get alot of info from the web but I suggest that you buy a copy of "ANDALUCIA ROUGH GUIDE" from your local bookshop. It's got everything, hotels, bars, restaurants, prices & maps etc. Parking is a nightmare, if you go by car, but the car parks are normally marked on the maps. Hot in summer. Very hot. Good Luck, Ed.

as long as you don't go in the next 2-3 weeks would be great during Semana Santa (Eastern) and Feria de Abril is almost impossible to find a hotel.

Great choice spent christmas there it was great and Jerez, and Cadiz are close by and both worth a visit.
