Firstly, never badmouth your previous employer or colleagues (no matter if that's the reason you want to quit!).

Give positive responses such as, "I am looking for new challenges," "I wish to apply my skills to new areas," "I find your company a fertile ground to proof my abilities," "I wish to take my experience to a higher level."

I've simply said an increase in pay if this applies to your situation. It is common for people to make moves for this reason. The trick with any answer is that is must seem genuine. Or. I've been more interested in this position because I would like to take on additional responsibilites. This is where you use your weakness to your advantage concept....such as I get so focused on a project I lose track of time.....?

I dont feel that my abilities were being challanged/utilized to their fullest extent and would like to take the opportunity to engage myself with a position where I can be a productive employee to help the company see its goals. (you can use this as your mission statement on your resume and they may not even ask you the question when you interview)

Depending on what your current job is,.. and what job you are seeking.
You could be looking for a less intense, less emotional, less stressful, less tragic career
OR
you could be looking for a career that is more challenging,.. or to help the public etc

Be honest,.. with a positive twist

"I have gained enough knowledge in my current feild. i beleive there is lots more to learn, so I'd like to join another firm to enhance my knowledge".

You could say "I am looking to better myself and there are no more positions in my place of employment for me to move up in. I am always looking to improve myself and believe I can do that working for you."
