I am building a new house and the well drilling contractor wants me to provide a peak GPM for him to quote the well.

You do not specify your state. The well drilling contractor is responsible for obtaining that information, not you. He is required to submit the information to the state. He is licensed for that reason. I would not finish paying him until he provides your certificate, indicating your water demand because if it is not enough, you will have many problems. I would call your water master in your area. You can find out from your local county government office to obtain the water master information. Check the license of the well driller too.

A good rule of thumb is 100 gallons per day per person. That will cover all including clothes washing.

Depends on the number of baths & number of people occupying the house.
