We look at the stars because they represent infinite possibilities. So say we have star fascination because we have lived other lives on other planets. Other say it represents the infinite power of God. I say because we are natural born explorer and space in the final frontier for man.

Because our eyes have either evolved or have been created to respond to fluctuations in light, and at night, some of the greater fluctuations of light are contributed to our senses by the stars.
Also, because the stars, are beyond our grasp, so the only senses we can sense them with is our sight, unlike distant mountains which we can explore by visiting, and unlike clouds, and other such things.
We like to explore things. We like to touch them, and to smell them, and to taste them, but we can't touch or smell or taste or hear stars. So, we have to be content just to watch them, and wonder what they might be all about.
