For a 8 to 10 foot high ceiling you should space them about 4 feet apart and about 2 feet off walls ( this is for 6 inch cans) so for a 10 x 10 room roughly 4 lights

Is it a vaulted ceiling?
and how big is your kitchen?
Is your kitchen open to other areas?
And how many windows are in your kitchen?
There is allot to take onto consideration.

We have a vaulted ceiling light colored walls and it is open to the dining room and living room. We have 5 halogen Can lights. It would also be a good Idea to get under lighting (where the lights are under the cupboards) to light the counter tops.

I think you mean spot lights, the name tells you where to put them, in all the spots you need light
They have an angle of light spread so the circle of light you get will depend on the angle you choose and the distance of the lights above the working area eg from work bench to ceiling
Actually I would not recommend them because they are inefficient (10% of energy as light 90% as heat), they have a poor life , are messy to change globes and are a fire hazard because of all the heat they generate.
Also they may become illegal for home use in a few years time

Depends on the light you are getting and the lighting you plan on needing.. go to Home Depot and ask and Electrical associate to help you find the right amount of lights you will need..
