A bag of things was thrown out in the garbage BEFORE being shredded. I am not sure EVERYTHING that was in the bag, but one items was a signed (but voided) check... therefore if found the person would have my checking account number and a good example of my signature.

Is there something I should/can do to protect myself against possible identity theft in the future...considering this information might now be out there?

No one can protect themselves from identity theft. But you should first call the bank and let them know. I am an independent associate and my company will monitor your credit and if something happens, they will alert you immediately (even if it is something you did) and if it is stolen, they will completely restore it.
